6 Sept. The first plate leaves the boot

Every Indian kitchen cooks one extra. So does ours.

Ask anyone who grew up here. The kitchen always made one more roti than it needed. Not for you. For the guest at the wrong hour, the neighbour's child, whoever turned up. A kitchen that cooks only what it needs is not a kitchen. It is a canteen.

We are a kitchen before we are a brand. Every packet we make goes to someone who paid for it, and we are proud of that. But once a month we do what every kitchen here has always done. We make the extra one, and we take it to people in Kolkata who would not get a hot meal today unless somebody carried one to them.

The food you buy is what pays for the food we give.

There is nothing to tick and nothing extra to pay. If you have ordered from us, you have kept this kitchen cooking, and that is what pays for the drive.

Cooked where your food is cooked

There is no separate kitchen for this. On the morning of a drive, the same people who cook your dal and your khichdi cook one more batch, the way they cook every day, with the same care. Nobody at the stove knows which containers will be sold and which will be given away, and that is exactly how we want it.

By noon the containers are sealed and go into a crate instead of a carton. The crate goes into the boot of our own car, and we drive. It is still warm when it reaches the people it was cooked for.

Nobody gets a lesser plate because they did not pay for it.

Into a crate instead of a carton. Still warm when the boot closes.

We did it for the first time on the 6th, a short drive from the unit, under a flyover where a few dozen families live.

It was smaller than it will be, and better than we deserved for a first attempt. We mostly opened containers and stayed out of the way.

A tradition is a thing that has happened twice.

How it runs

One drive a month, done properly, is the whole ambition. Here is the shape of it.

1Paid for by the food we sell

There is no separate fund and no add-on at checkout. The kitchen runs on what you buy, and once a month part of what it cooks goes out for free.

2We cook, we carry, we serve

Our kitchen cooks it, our team and our family carry it, and we hand it over ourselves. Photos and videos go up within the week.

The rules we keep

  • 1The numbers on this page are exactly what the kitchen cooked and served that day. The photos are right beside them.
  • 2Nothing is added to your bill for this. There is no tip jar and no tax receipt. It is paid for out of what you already spend with us.
  • 3It is cooked in our own kitchen, by the same people, with the same care. Nothing is cooked to a lower standard because nobody is paying for it.
You can come too. In Kolkata on a drive day? Come and hand out plates with us.

Bring nothing but yourself. Family, friends, customers, anyone. Message us and we will send you the date, the time and the place.
